  • 4 boneless, skinless chicken breasts
  • ¼ cup of pesto
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the chicken breasts between 2 sheets of plastic wrap and pound them to an even thickness.

  3. Season the chicken breasts with salt and pepper.

  4. Spread a tablespoon of pesto onto each chicken breast.

  5. Roll up the chicken breasts tightly and secure with toothpicks.

  6. Place the roll-ups onto a baking dish and bake for 20-25 minutes or until the chicken is cooked through.

  7. Remove the toothpicks before serving.
