How To Make Chef John’s Green Chicken Chili Recipe

- 2 boneless, skinless chicken breasts, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (4.5 ounces each) chopped green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups chicken broth
- 1 can (15 ounces) white beans, drained and rinsed
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- Optional toppings: sour cream, shredded cheese, sliced jalapenos
Instructions

In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned on all sides. Remove from pot and set aside.

In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

Stir in the chopped green chilies, ground cumin, dried oregano, salt, and black pepper. Cook for 2 minutes to toast the spices.

Pour in the chicken broth and bring to a boil. Reduce heat to simmer and add the browned chicken back into the pot. Cook for 30 minutes, until chicken is cooked through.

Stir in the drained white beans, chopped cilantro, and lime juice. Cook for an additional 5 minutes.
