How To Make Slow Cooker Asian Chicken Lettuce Wraps

Put together a healthy and filling meal with these easy lettuce wraps, packed with rice, water chestnuts, and tender, slow-cooked chicken!

Preparation: 15 minutes

Ingredients

  • 2lbsground chicken,not ground chicken breast
  • 3garlic cloves,minced
  • 1red bell pepper,cored, finely chopped
  • ½cupyellow onion,finely chopped
  • ½cuphoisin sauce
  • 2tbspsoy sauce
  • salt and freshly ground black pepper
  • 8ozwater chestnuts,(1 can), sliced, drained, rinsed
  • cupswhite rice,or brown, cooked
  • 3green onions,sliced
  • 1tbsprice vinegar,optional
  • tspsesame oil
  • 2iceberg lettuce heads

Instructions

  1. Place the ground chicken and garlic in a large microwave-safe bowl.

  2. Microwave the mixture for about 5 to 6 minutes, stirring occasionally, until the chicken is no longer pink. Drain off the liquid and pour the mixture into a 5 to 7-quart slow cooker.

  3. Add the bell pepper, onion, hoisin sauce, soy sauce, ½ teaspoon of salt, and ½ teaspoon of pepper, then toss the mixture.

  4. Cover and cook on Low heat for 2 to 3 hours until the chicken is tender.

  5. Stir in the water chestnuts, cooked rice, green onions, rice vinegar, and sesame oil, then cook for 3 to 5 minutes until heated.

  6. Season with additional salt, as desired. Separate the iceberg lettuce leaves, then serve with the chicken filling. Enjoy!
