This copycat barbacoa beef burrito mixes spices and chili and slow-cooked in 3 hours to achieve that tender and savory flavor just like Chipotle!

  • cupapple cider vinegar
  • 4tspgarlic cloves,minced
  • 4tspcumin
  • 2tsporegano
  • 1tspblack pepper,ground
  • 1tspsalt
  • ½tspcloves,ground
  • 1tbspvegetable oil
  • ¾cupchicken broth
  • 3bay leaves
  • 3tbsplime juice
  • 3chipotle chili
  • 5lbschuck roast


  1. Preheat oven to 325 degrees F.

  2. In a food processor, combine vinegar, lime juice, chipotle, garlic, cumin, oregano, black pepper, salt, ground cloves, and process until small homogenous chunks form.

  3. Trim your beef, add vegetable oil to a large dutch oven and heat on high.

  4. Sear the beef on all sides until deeply browned

  5. Pour over the beef and spread on it evenly.

  6. Add chicken broth on the sides of the beef so the topping will not fall off.

  7. Cook using a slow cooker on Low for 7 hours.
