How To Make Vegetarian Millet Lettuce Wraps
These lettuce wraps makes for a light vegetarian lunch! It’s filling thanks to the millet, with freshness from carrots, coriander, lime, and crisp onions.

Ingredients
- 1tspbutter
- ¼cupmillet
- ½cupwater
- ¼small onion,chopped
- ½lime,juiced
- 1small garlic clove,minced
- 1tspfresh cilantro,chopped
- ½tspsalt
- 3butter lettuce leaves
- 1carrot,chopped
Instructions

Melt the butter in a small saucepan over medium heat; add millet and cook for 4 to 5 minutes until toasted and fragrant.

Add the water, cover, and simmer for about 10 minutes, until most of the water is absorbed.

Stir the onion, lime juice, garlic, cilantro, and salt into millet; cook and stir for 5 minutes more, until heated through and the liquid is completely absorbed.

Cool the millet mixture for 3 minutes.

Divide the chopped carrot among butter lettuce leaves. Spoon millet mixture over carrots.
