Ingredients

  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup shredded lettuce
  • 1/2 cup diced red onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine cooked rice, black beans, tomatoes, bell peppers, lettuce, red onions, cilantro, lime juice, olive oil, salt, and pepper. Mix well.

  2. Lay a tortilla flat on a clean surface. Spoon a generous amount of the rice and bean mixture onto the center of the tortilla.

  3. Fold in the sides of the tortilla, then roll up tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and filling.

  4. Serve the burritos immediately or wrap them in aluminum foil and refrigerate until ready to serve.
