Ingredients

For Crepes:

  • 1½ cups flour
  • 1¾ cups milk
  • 3 eggs
  • ¼ cup beer
  • 1 tbsp sugar
  • ½ tsp salt
  • butter, for greasing pan

For Toppings:

  • butter
  • lingonberry jam
  • powdered sugar, optional

Instructions

  1. To create the batter, in a mixing bowl whisk together flour, milk, eggs, beer, sugar, and salt. Mix well until smooth and no lumps remain.
  2. Preheat a skillet over medium heat and add a small amount of butter. Pour ¾ cup batter into the center of the skillet. Swirl batter around to cover the bottom of the skillet in a thin layer. Cook for 2 to 3 minutes or until crepe is dry on top.
  3. Shake pan to free crepe and then flip to the other side. Heat for another 30 seconds and transfer to a plate.
  4. Fold the crepe in half and then in half again. Top with whipped butter, and lingonberry jam. Sprinkle powdered sugar if desired.
