Marvelous Breakfast Burrito Recipe

Marvelous Breakfast Burritos Recipe

This breakfast burrito features chopped chorizo sausages, red potatoes, cheese and a kick of from the hot sauce.

  • 8 flour tortillas (burrito size )
  • 2 chorizo sausages (chopped)
  • Mexican blend cheese (shredded)
  • 1 bunch green onions (trimmed and chopped)
  • ½ green pepper (diced)
  • 3 red potatoes (scrubbed, cut in small pieces)
  • 3 large eggs (beaten)
  • hot sauce (Tabasco or salsa)
  1. In a skillet, over medium heat, add the sausage, onion, green pepper, and potatoes.
  2. Cover and stir occasionally, cooking until the potatoes are tender.
  3. Lower heat so the sausage cooks but does not get crispy.
  4. When potatoes are tender, push all to side of skillet and add the eggs.
  5. When they start to set, stir to scramble and cook till done.
  6. Mix the eggs and other ingredients together gently and remove to a bowl.
  7. In another skillet or on a griddle, heated to medium, cook a flour tortilla about one minute on each side to brown very lightly.
  8. Remove to a plate, add a large spoonful of the egg mixture in the center of the tortilla.
  9. Sprinkle with cheese and fold as you would a burrito.
  10. Repeat with each tortilla until the mixture is used up.
  11. You can either serve immediately or wrap in aluminum foil and refrigerate over night.
  12. Heat the wrapped burritos in the oven until they are warm.
  13. Serve with salsa and hot sauce.
