Ingredients

Grilled pear salsa:

  • 2 large pear, sliced into ½-inch-thick slices
  • 1 tbsp canola oil
  • ¼ cup small red onions, diced
  • 1 tsp garlic, chopped
  • 1 small jalapeno, diced
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp lemon juice
  • salt
  • black pepper, freshly ground

Quesadilla:

  • cups cooked chicken meat, shredded
  • 6 flour tortillas, 6-inch
  • ¼ cup scallions, sliced
  • ¾ cup Gruyere, shredded
  • salt
  • black pepper, freshly ground
  • 2 tbsp butter, melted
  • ¼ cup crème fraiche

Instructions

To make the salsa:

  1. Core and remove seeds from pears
  2. Place the pears on a hot grill or grill pan and grill for 3 minutes per side. Remove from grill and let cool.
  3. Chop grilled pears into small pieces and place them in a small bowl. Add in red onions, garlic, jalapeno, oregano, and lemon juice. Mix well. Season with salt and pepper.
  4. Refrigerate for 30 minutes before serving.

To make the quesadillas:

  1. Preheat the oven to 350 degrees F.
  2. Mix the shredded chicken, green onions, and gruyere together. season with salt and pepper. Place in oven until cheese is melted.
