Ingredients

  • ½cupGreek yogurtplain fat free
  • ¼cupmayonnaisefull fat
  • 2tspfresh lemon juice
  • 2tbspgreen onionsthinly sliced
  • 1tbspparsleyminced
  • salt and freshly ground black pepper
  • 3cupschicken breastdiced cooked and chilled
  • 6slicesbaconcooked and chopped
  • cupsgrape tomatoeshalved
  • ½cupcelerydiced
  • 1medium avocadofairly firm but ripe, diced
  • Romaine lettuce leavesfor serving

Instructions

  1. In a medium mixing bowl, stir together the Greek yogurt, mayonnaise, lemon juice, green onions, parsley.

  2. Season with salt and pepper to taste.

  3. Add the chicken, bacon, tomatoes and celery to a large mixing bowl.

  4. Add in the dressing mixture, then toss to coat.

  5. Gently toss in the avocado.

  6. Serve over lettuce leaves, and enjoy!
