Zucchini Stir Fry Recipe

 

Make your zucchini stir fry more interesting with the addition of scallops. This recipe is light, delicious, and healthy.

Ingredients

  • ¼ lb bay scallops
  • 1 pc zucchini, medium
  • cup red orange, and yellow sweet peppers, sliced
  • 1 cup baby spinach
  • 1 pc onion, sliced, medium
  • 2 tsp garlic, minced
  • 2 tsp fish sauce
  • ground black pepper, to taste
  • 2 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a wok.
  2. Sauté the garlic and onion
  3. Add the scallops. Cook for 1 minute.
  4. Put-in the zucchini. Stir-fry for 2 minutes.
  5. Add the sweet peppers, spinach, and fish sauce. Continue to stir-fry for 2 to 3 minutes.
  6. Sprinkle some ground black pepper to taste.
  7. Transfer to a serving plate.
  8. Serve with fried rice. Share and enjoy!
