How To Make Puerto Rican Style Beans

These Puerto Rican style beans are the perfect side dish to prepare on busy days made with pink or red canned beans and diced potatoes cooked together.

Serves:

Ingredients

For the sofrito:

  • ½small onion
  • ½cubanelle,banana pepper
  • 3garlic cloves
  • ¼cupcilantro,chopped

For the beans:

  • 1tspolive oil
  • 15½ozkidney beans,pink or red
  • ½cuptomato sauce
  • 1medium potato,peeled and diced
  • tbspSazon seasoning
  • 1bayleaf
  • tsporegano
  • kosher salt,to taste
  • black pepper,to taste

Instructions

  1. In a mini food processor, chop onions, garlic, pepper, and cilantro.

  2. Add oil to a medium saucepan and sauté the chopped ingredients, cook on medium heat until soft, for about 2 minutes.

  3. Add the beans to the saucepan along with 3/4 cup of water.

  4. Add tomato sauce, potato, Sazon, bay leaf, oregano, salt if needed, and a pinch of black pepper.

  5. Bring to a boil then cover and simmer on low for about 20 minutes or until potatoes are soft.

  6. Discard bay leaf and serve over rice if desired.
