How To Make Szechuan Beef

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp Szechuan peppercorns, crushed
  • 1 tsp chili flakes
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 2 green onions, sliced
  • Steamed rice, for serving


  1. In a large pan or wok, heat vegetable oil over high heat. Add minced garlic and ginger, and sauté until fragrant.

  2. Add beef slices to the pan and cook until browned.

  3. In a small bowl, whisk together soy sauce, crushed Szechuan peppercorns, chili flakes, cornstarch, and water.

  4. Pour the sauce mixture into the pan with the beef and cook for a few minutes until the sauce thickens and coats the beef evenly.

  5. Stir in sliced green onions and cook for an additional minute.

  6. Serve the Szechuan beef over steamed rice.
