How To Make Stir-Fry Soba Noodles with Veggies
Enjoy a delectable bite of this stir-fry soba noodles, tossed with broccoli and bell peppers in a nutty and spicy sauce, for a filling and rich meal!

Ingredients
- 2ozsoba noodles,uncooked
- ½tbspsesame oil,toasted
- ½tspgarlic,minced
- ½tspground ginger
- ¼cuponion,chopped
- ¼cupbell pepper,chopped
- ¼cupbroccoli florets
- 1large egg,pasture-raised
- 1tbspcoconut aminos
- 1tbspSriracha sauce,or to taste
- 1tbspcreamy nut butter
Instructions

Fill a medium pot halfway with water and bring it to a boil. Add the soba noodles, then cook for about 4 to 6 minutes until tender.

Heat the sesame oil in a large skillet over medium heat. Add the garlic, ginger, onion, bell pepper, and broccoli.

Cover the skillet and cook, stirring occasionally for about 3 to 4 minutes until softened.

Strain the soba noodles, then add them to the vegetables in the skillet.

Push everything to one side, then crack the egg into the skillet. Cook, breaking up the yolk and white until scrambled, then mix into the vegetables and noodles.

Add the coconut aminos, Sriracha, and nut butter, then mix well.
