Ingredients

  • 8 ounces of pasta
  • 2 tablespoons of olive oil
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup of mushrooms, sliced
  • 1 cup of broccoli florets
  • 1/4 cup of soy sauce
  • 2 tablespoons of hoisin sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet or wok, heat the olive oil over medium heat.

  3. Add the onion and garlic, and sauté until they become fragrant and translucent.

  4. Add the bell pepper, zucchini, mushrooms, and broccoli. Stir fry for about 5-7 minutes, until the veggies are tender-crisp.

  5. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Pour the sauce over the veggies and stir well to coat.

  6. Add the cooked pasta to the skillet and toss everything together until the pasta is coated with the sauce and heated through.

  7. Season with salt and pepper to taste.

  8. Serve the stir fried pasta with veggies hot, garnished with chopped green onions.
