How To Make Spiced Singapore Noodles with Cauliflower, Chicken & Prawns

Ingredients

  • 200g rice noodles
  • 1 cauliflower, cut into florets
  • 200g chicken breast, sliced
  • 200g prawns, peeled and deveined
  • 2 cloves of garlic, minced
  • 1 red chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp vegetable oil
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. Heat the vegetable oil in a large pan or wok over medium heat. Add the garlic and chili, and sauté for 1 minute.

  3. Add the chicken and prawns, and cook until they are no longer pink, about 5 minutes.

  4. Add the cauliflower, turmeric powder, and curry powder. Stir fry for another 5 minutes, until the cauliflower is tender.

  5. Add the cooked rice noodles to the pan, followed by the soy sauce and oyster sauce. Stir well to combine and cook for an additional 2-3 minutes.

  6. Season with salt to taste.

  7. Serve the Spiced Singapore Noodles hot, garnished with fresh cilantro and lime wedges.
