How To Make Lentils and Brown Rice with Tofu

This simple brown rice recipe can be easily made with cooked brown rice and lentils from the night before. It's a healthy vegetarian meal which makes for a flavorful lunch.

  • 1 tsp. olive oil
  • 1 cup onion (frozen chopped )
  • 1/2 cup green bell pepper (frozen chopped )
  • 4 oz. firm tofu (pressed and cut into into 1-inch cubes)
  • 1/2 cup lentils (cooked )
  • 1/2 cup brown rice (cooked )
  • 1 tbsp. reduced-sodium soy sauce
  • 1/2 fresh lime (juice)
  1. In a heavy-bottomed skillet, heat oil over medium-high heat.
  2. Add onion and bell pepper.
  3. Cook, stirring, until onion is lightly browned, about 5 minutes.
  4. Add tofu and continue to stir-fry for another 2 minutes, until tofu is lightly browned.
  5. Add remaining ingredients and cook, stirring gently, for another 2 to 3 minutes, until lentils and rice are heated through.
