How To Make Slow Cooker Tacos al Pastor

Ingredients

  • 2 lbs pork shoulder, thinly sliced
  • 1 cup pineapple chunks
  • 1/2 cup orange juice
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, diced
  • 8 small corn tortillas
  • Lime wedges, for serving

Instructions

  1. In a slow cooker, combine the pork shoulder, pineapple chunks, orange juice, garlic, chili powder, cumin, oregano, smoked paprika, salt, and black pepper. Mix well to coat the pork evenly.

  2. Cover and cook on low heat for 6 hours, or until the pork is tender and easily shreds with a fork.

  3. Using two forks, shred the cooked pork in the slow cooker.

  4. Heat the corn tortillas in a dry skillet over medium heat until warm and pliable.

  5. To assemble the tacos, spoon some of the shredded pork onto each tortilla. Top with chopped cilantro and diced red onion. Squeeze a lime wedge over each taco.

  6. Serve the Slow Cooker Tacos al Pastor with your favorite toppings, such as avocado slices, salsa, or hot sauce.
