Ingredients

  • 2 lbs pork loin
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth

Instructions

  1. In a small bowl, mix together honey, Dijon mustard, minced garlic, dried thyme, salt, and black pepper.

  2. Place pork loin in a slow cooker and pour the honey mustard mixture over it.

  3. Add chicken broth to the slow cooker.

  4. Cover and cook on low for 6 hours or until the pork is tender and cooked through.

  5. Remove pork from the slow cooker and let it rest for a few minutes before slicing.

  6. Serve the sliced pork loin with the remaining sauce from the slow cooker.
