Ingredients

  • 1 lb dried lima beans, soaked overnight and drained
  • 1 lb smoked ham, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 bay leaves

Instructions

  1. Place the soaked and drained lima beans, diced smoked ham, chopped onion, minced garlic, chicken broth, salt, black pepper, paprika, cayenne pepper (if using), and bay leaves into a slow cooker.

  2. Stir everything together to combine.

  3. Cover the slow cooker and cook on low for 6 hours, or until the lima beans are tender.

  4. Remove the bay leaves before serving.

  5. Serve the slow cooker southern lima beans and ham hot, as a main dish or a side dish.
