How To Make Slow Cooker Moroccan Chickpea Stew
Have a light and healthy dinner with this chickpea stew, loaded with tender turkey and veggies, all tossed in the slow cooker, for a fuss-free meal!
Spray a large nonstick skillet with cooking spray and over medium-high heat cook ground turkey for 10 to 12 minutes.
Break up the ground meat and mix so the meat cooks evenly, then place in the slow cooker.
To the skillet, add the olive oil, onions, pepper, carrots, and celery and sauté for about 8 minutes until soft. Add garlic and sauté for another 2 minutes.
Transfer to slow cooker along with diced tomatoes, chickpeas, spices, broth and gently mix well.
Cover and cook on Low for 6 to 8 hours.
Remove the bay leaves and serve; garnish with fresh herbs. Enjoy!
