Ingredients

  • 2 pounds beef chuck roast
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup apple cider vinegar
  • 2 tablespoons ground cumin
  • 2 tablespoons dried oregano
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Trim any excess fat from the beef chuck roast and place it in the slow cooker.

  2. In a small bowl, mix together garlic, onion, chipotle peppers, adobo sauce, lime juice, apple cider vinegar, cumin, oregano, paprika, salt, and black pepper. Pour the mixture over the beef in the slow cooker.

  3. Add beef broth to the slow cooker and stir everything together.

  4. Cook on low heat for 8 hours, or until the beef is tender and easily shreds with a fork.

  5. Once the beef is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir it into the sauce.

  6. Serve the barbacoa beef in tacos or burritos, topped with your favorite toppings such as diced onions, fresh cilantro, and lime wedges.
