  • 4cupszucchini,grated
  • cupsHeart Smart Bisquick
  • cuponion,minced
  • 3egg whites,large, beaten
  • 1egg,large, beaten
  • 1tbspolive oil
  • ¼cupparmesan cheese,grated
  • 1tspkosher salt and fresh black pepper,to taste
  • 1tspparsley


  1. Preheat oven to 350 degrees F.

  2. Mix everything together in a bowl.

  3. Spray 9 x 13-inch baking dish with cooking spray and pour mixture.

  4. Bake until golden brown and a toothpick inserted in the center comes out clean, approximately 45 to 50 minutes.

  5. Cut into 12 equal pieces.
