Ingredients

  • 250g macaroni
  • 300g smoked haddock fillets
  • 2 tbsp truffle oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 250ml cream
  • 100ml milk
  • 100g grated cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F). Cook the macaroni according to the package instructions until al dente. Drain and set aside.

  2. In a large pan, heat the truffle oil over medium heat. Add the onion and garlic and cook until softened.

  3. Add the smoked haddock fillets to the pan and cook for 5 minutes, gently breaking them up with a spoon.

  4. Pour in the cream and milk, and bring to a simmer. Allow the mixture to simmer for 5 minutes, then remove from heat.

  5. Stir in the cooked macaroni and half of the grated cheddar cheese. Season with salt and pepper to taste.

  6. Transfer the mixture to a baking dish and sprinkle the remaining grated cheddar cheese on top.

  7. Bake in the preheated oven for 20 minutes, or until the cheese is melted and golden.

  8. Serve hot and enjoy!
