Ingredients

  • 500g smoked haddock fillets
  • 400ml whole milk
  • 50g butter
  • 50g plain flour
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 100g cheddar cheese, grated
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a baking dish.

  2. Place the haddock fillets in a large saucepan and pour in the milk. Bring to a simmer and cook for 5 minutes. Remove the fish from the milk and set aside.

  3. In a separate saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic and cook until softened.

  4. Stir in the flour and cook for 1 minute. Gradually whisk in the reserved milk from poaching the haddock until smooth and thickened.

  5. Remove from heat and stir in half of the grated cheddar cheese, lemon zest, and lemon juice. Season with salt and pepper.

  6. Flake the haddock into large chunks and place evenly in the greased baking dish. Pour the cheese sauce over the top.

  7. Sprinkle the remaining grated cheddar cheese on top and bake in the preheated oven for 20 minutes or until golden and bubbling.

  8. Remove from the oven and garnish with freshly chopped parsley. Serve hot.
