I grew up with this casserole and now I make it for my kids too. It’s a family favorite! It can be made during any season and the recipe can easily be doubled.

How To Make Teeny's Mexican Casserole

  • 1 lb ground turkey , or meat
  • 1 pkg corn tortillas, 12 count
  • 1 can cream of mushroom soup , or celery soup
  • 3 cup cheddar cheese, shredded
  • 1 can green chilies, chopped
  • onions , to taste
  • salt and pepper , to taste
  • Mrs. Dash , to taste
  • cumin , to taste
  • ¼ cup milk


  1. Brown ground beef or turkey in frying pan. Add the spices, onions, and chilies.

  2. Meanwhile, in a large bowl, add the soup, and tear up corn tortillas in small pieces. Add 1-2 cups of cheese as you please.

  3. Combine meat and tortilla mixture. Stir well. Add the milk in as well and mix again.

  4. Pour into a 9x13-inch greased baking pan, top with the rest of the cheese, and bake in moderate oven at 350 degrees for 20-30 minutes.
