Stuffed peppers are delicious, but sometimes they can be a pain to cook. Instead of wasting your time, toss them all together with this simple stuffed pepper casserole recipe! It takes the work out of it but leaves the flavor you love.

How To Make Stuffed Pepper Casserole

This stuffed pepper casserole has a lovely blend of flavors. Top it with some cheese and let it melt for some gooey goodness.

Ingredients

  • 1 lb ground beef
  • ½ cup onion, chopped
  • 1 can diced tomatoes, (14 oz)
  • 4 large red bell peppers, or yellow bell peppers, seeded, stems removed and cut in halves
  • 2 tbsp Worcestershire sauce
  • ½ cup rice, uncooked
  • ¾ cup water
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup cheddar cheese, shredded

Instructions

  1. Brown ground beef and onion in a skillet; drain.

  2. Place the pepper halves in a 2-quart casserole dish.
  3. Mix all other ingredients in a bowl.
  4. Scoop a portion of each into the pepper halves.
  5. Cover and bake at 350 degrees F for 1 hour or until rice is tender.

  6. Uncover and sprinkle with cheese.
  7. Return to oven until cheese melts, about 5 minutes.
