Stuffed Pepper Casserole Recipe

How To Make Stuffed Pepper Casserole

Spice up dinner time with this hearty stuffed pepper casserole made of rice, ground beef, and tomato sauce, which the whole family will surely love!

Preparation: 20 minutes
Cooking: 25 minutes
Total: 45 minutes



  • 1lbground beef
  • 1onion,diced
  • 2garlic cloves,minced
  • cupsbell pepper,red, green and/or yellow, diced
  • 2tspItalian seasoning
  • 2cupsbeef broth
  • 14½oztomatoes,diced, undrained
  • cupstomato sauce
  • 3tbsptomato paste
  • 1cupbasmati rice,uncooked
  • 1cupmozzarella cheese,shredded
  • salt & pepper,to taste


  1. Brown beef with onion and garlic until no pink in the meat remains. Drain excess fat.

  2. Add peppers, seasonings, beef broth, tomatoes, tomato sauce, tomato paste, rice, and salt and pepper to taste.

  3. Bring mixture to a boil, reduce heat to a simmer, and cover. Simmer for 25 minutes or until the rice is tender. You may add more beef broth as needed.

  4. Once the rice is tender, top with cheese and cover with a lid until melted. Optionally, broil for an additional 2 to 3 minutes.
