Southwestern Style Sausage, Egg & Cheese Breakfast Casserole Recipe

This spicy egg breakfast casserole features flavorful Ortega chilies and green pepper. It’s got a ton of flavor and a satisfying fill. You can’t go wrong with a bite from this.


A heavy breakfast casserole made with southwestern style sausage, eggs and a generous amount of cheese.

Ingredients

  • 18 eggs
  • 1 Ortega green chilies
  • 1 lb sausage
  • 2 ½ cup Monterey Jack cheese, or Pepper Jack cheese
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 tsp butter

Instructions

  1. Grease crock with butter.
  2. Starting with sausage, layer meat, chilies, onions, peppers and cheese, repeating the layering process until all ingredients are used and ending with a layer of cheese.
  3. Beat eggs, and then pour over mixture in the slow cooker.
  4. Cover and turn on low.

  5. Cook for 7-8 hours.
  6. Serve with sour cream or fresh salsa.
