Serves:

Ingredients

  • 4 sausages
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 2 bell peppers, sliced
  • 1 zucchini, sliced
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 tsp of dried thyme
  • 1 tsp of dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat a large pot or skillet over medium heat. Add the sausages and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the onion and garlic. Cook until the onion becomes translucent.

  3. Add the bell peppers and zucchini to the pot. Cook for a few minutes until they begin to soften.

  4. Pour in the diced tomatoes and chicken broth. Stir in the dried thyme and oregano. Season with salt and pepper.

  5. Return the sausages to the pot. Cover and simmer for about 15 minutes, or until the sausages are cooked through and the vegetables are tender.

  6. Serve the sausage and vegetable mixture in bowls, garnished with fresh parsley.
