Ingredients

  • 1 package of frozen pierogies (16oz)
  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 8 oz of mushrooms, sliced
  • 1 cup of sour cream
  • 1 cup of chicken or vegetable broth
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a casserole dish.

  2. Cook the frozen pierogies according to package instructions and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

  4. Add the minced garlic and sliced mushrooms to the skillet and cook until the mushrooms are soft and golden brown.

  5. Stir in the sour cream and chicken or vegetable broth, and season with salt and pepper.

  6. Add the cooked pierogies to the skillet and gently mix everything together until well combined.

  7. Transfer the mixture to the greased casserole dish and sprinkle the shredded cheese on top.

  8. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  9. Garnish with chopped fresh parsley before serving.
