Ingredients

  • 8 ounces macaroni
  • 2 cups mixed vegetables (such as peas, carrots, and broccoli)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the macaroni according to package instructions. Add the mixed vegetables during the last 2 minutes of cooking. Drain and set aside.

  2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  3. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the mixture thickens.

  4. Remove the saucepan from heat and stir in the shredded cheese until melted and smooth.

  5. Add the cooked macaroni and vegetables to the cheese sauce. Season with salt and pepper, and stir until well combined.

  6. Serve hot and enjoy!
