Ingredients

  • 1 pound green beans, trimmed
  • 1 cup corn kernels
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Bring a pot of salted water to a boil. Add the green beans and corn, and cook for 3-4 minutes until crisp-tender. Drain and set aside.

  3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  4. Add the green beans, corn, and vegetable broth to the skillet. Season with salt and pepper, and stir to combine.

  5. Transfer the mixture to a casserole dish. Sprinkle shredded cheddar cheese on top, followed by bread crumbs.

  6. Bake for 20-25 minutes, or until the cheese is melted and the top is golden brown.

  7. Serve hot and enjoy!
