Ingredients

  • 1onion,small, sliced
  • 1tbspbutter
  • 1tbspolive oil
  • ½tspItalian seasoning
  • 1lbyellow squash
  • 1lbzucchini
  • salt,to taste
  • pepper,to taste
  • ¼cupparmesan cheese,grated
  • ¼cupcheddar cheese
  • cupbread crumbs,seasoned
  • 2tbspbutter

Instructions

  1. Preheat oven to 350 degrees F.

  2. Slice yellow squash and zucchini into ¼-inch slices.

  3. Cook onion in butter and oil until tender. Add yellow squash, zucchini, Italian seasoning, salt, and pepper. Cook for 5 to 6 minutes, or just until tender-crisp.

  4. Place yellow squash, zucchini, and onions in a greased 2-quart casserole dish.

  5. Combine breadcrumbs, cheeses, and melted butter in a small dish. Sprinkle over yellow squash and zucchini.

  6. Bake for 35 to 40 minutes, or until yellow squash and zucchini is tender.

  7. Serve and enjoy!
