Ingredients

  • 1 lb ground beef, 90% lean
  • 2 tbsp cooking oil
  • ½ cup onions, chopped
  • ½ cup green bell peppers, chopped
  • 1 cup salsa
  • 1 oz low-sodium taco seasoning mix, (1 packet)
  • 2 cups Monterey Jack cheese, shredded, divided, or Colby Cheese
  • 17 oz nacho flavored Doritos, (1 family-sized bag)

Optional Toppings:

  • tomatoes, diced
  • green onions
  • olives
  • guacamole
  • lettuce, shredded

Instructions

  1. Lightly crush up the Dorito chips. Set aside.
  2. Preheat the oven to 350 degrees F.
  3. Heat up the pan, and add oil.
  4. Saute the ground beef on high heat until there are no longer parts that are pink.
  5. Stir constantly for about 8 minutes.
  6. Add the onions and bell pepper. Saute for another 2 minutes.
  7. Take the beef mixture off the heat.
  8. Add in taco seasoning, salsa, and sour cream. Mix well to combine.
  9. Layer half of the Doritos in the bottom of a casserole.
  10. Add half of the beef, then top with 1 cup of cheese. Repeat.
  11. Cover the baking dish with foil.
  12. Bake the Dorito casserole for 20 minutes.
  13. Then remove the foil and bake for another 10 minutes.
  14. Remove from the oven and let cool for 5 minutes. Serve and enjoy!
