How To Make Creamy Leek, Potato, Cheddar & Chive Fish Pie

Ingredients
- 500g white fish fillets
- 2 leeks, sliced
- 3 medium potatoes, peeled and diced
- 200g cheddar cheese, grated
- 3 tbsp chopped fresh chives
- 300ml milk
- 2 tbsp all-purpose flour
- 2 tbsp butter
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F) and lightly grease a baking dish.

In a large pan, melt the butter over medium heat. Add the leeks and cook until softened.

Add the diced potatoes and flour to the pan and cook for 2 minutes, stirring constantly.

Slowly pour in the milk, stirring continuously, until the mixture thickens.

Add the grated cheddar cheese and stir until melted and smooth.

Season with salt and pepper to taste.

Place the white fish fillets on top of the leek and potato mixture in the baking dish.

Pour the creamy sauce over the fish and sprinkle with chopped chives.

Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and the top is golden and bubbling.
