How To Make Chicken with Mushrooms and Muenster Cheese

  • 4 whole chicken breasts, boned and skinned
  • 3 eggs
  • ½ cup Italian flavored bread crumbs
  • 6 tbsp butter
  • 10 ¾ oz chicken broth
  • 2 tsp lemon juice
  • 6 oz Muenster cheese, sliced
  • 8 oz fresh mushrooms


  1. Cut chicken breasts into bite size pieces.
  2. Soak several hours or overnight in 3 beaten eggs.
  3. Preheat oven to 350 degrees.
  4. Roll chicken pieces in bread crumbs, sauté with sliced mushrooms in margarine for 10-15 minutes.
  5. Place in casserole.
  6. Pour chicken broth over chicken and mushrooms.
  7. Sprinkle with lemon juice.
  8. Cover with sliced Muenster cheese.
  9. Bake uncovered for 30-40 minutes.
