Chicken Gravy Enchilada Casserole Recipe

A casserole using leftover chicken and gravy. You can also use turkey. Serve with salsa, shredded lettuce, sour cream and black olives if desired.

How To Make Chicken Gravy Enchilada Casserole

Delicious enchilada sauce to save those leftover chicken

  • 4 cups chicken breast meat (diced skinless, boneless )
  • 4 cups chicken gravy
  • 12 corn tortillas (6-inch )
  • 2 cup Cheddar cheese (shredded )
  • 7 oz diced green chilies
  • 3 stalks celery (chopped)
  • 1 cup water
  • 1 onion (chopped)
  • 1 tsp garlic salt
  • salt
  • pepper ( to taste)
  1. In a large skillet combine chicken, gravy, water, onion, celery, chili peppers, garlic salt, salt and pepper.
  2. Stir together to mix.
  3. Cover skillet and simmer over low heat for 1-2 hours.
  4. Preheat oven to 350 degrees.
  5. In a 11×14 inch baking dish layer 6 tortillas, then 1/2 of the chicken mixture, then 1/2 of the cheese.
  6. Repeat layers.
  7. Bake in the preheated oven for 30-40 minutes or until cheese is melted and bubbly.
