
How To Make Breakfast Casserole with Spinach and Feta
This easy-to-make breakfast casserole is loaded with eggs, Feta cheese, tomatoes, and lots of healthy spinach, for a filling meal!

Ingredients
- olive oil spray
- 1tspolive oil
- 3shallots,chopped
- 6ozbaby spinach,(1 bag)
- 24large eggs,beaten
- 2cups2% milk
- ½cupheavy cream
- 12ozfeta cheese,crumbled
- 3scallions,chopped
- 3plum tomatoes,seeded, diced
- 2½tspkosher salt
- black pepper,to taste
Instructions

Preheat the oven to 350 degrees F. Spray a 9x13x3-inch Pyrex Deep baking dish with oil.

Heat a large skillet over medium heat. Add the oil and shallots and cook until soft for 6 to 8 minutes.

Add the spinach and cook until wilted. Remove from heat.

In a large bowl, whisk the eggs, milk, heavy cream, Feta, scallions, tomatoes, salt, and black pepper. Mix in the spinach and shallots, then pour into the prepared dish.

Bake for about 1 hour 20 minutes until the center is solid and cooked through.
