  • 1 lb ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 cup long-grain rice
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, green bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender.

  3. Stir in the long-grain rice, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.

  4. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.

  5. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

  6. Garnish with fresh cilantro before serving.
