
How To Make Spicy Thai Beef and Jasmine Rice
Turn things up at dinner with this spicy Thai beef dish paired with aromatic jasmine rice! Sauteed ground beef and carrots are simmered in spices. Yummy!

- ¾lbground beef,95% lean
- ½onion,chopped
- 6mediumgreen onions,or scallion, chopped
- 2cloves garlic,minced
- ½tspred pepper,crushed
- 3mediumcarrots,thinly sliced
- ½red bell pepper,chopped
- 1cupjasmine rice
- 2tbspsoy sauce,plus more to taste
- 1tspAsian fish sauce
- â…“cupfresh cilantro,chopped
Instructions

Heat a heavy medium pot over high heat. Add beef and saute until browned.

Add onion, scallions, garlic, crushed red pepper, and 1 tablespoon of soy sauce. Saute for another 2 minutes.

Add carrots, red pepper, rice, 2 cups water, fish sauce, and remaining soy sauce.

Reduce to low heat, when the water is almost evaporated, cover. Simmer on low for about 20 minutes.

Add cilantro and mix well and keep covered for 10 more minutes.
