How To Make Taco Stuffed Pepper Casserole

Ingredients
- 1lbground beef
- 1onion,diced
- 2clovesgarlic,minced
- 1pkgtaco seasoning
- ⅓cupwater
- 3bell peppers,any color, diced
- 14oztomato with juice,diced
- 8oztomato sauce
- 2cupsinstant rice,minute rice
- 1⅔cupsbeef broth
- 1cupcheddar cheese
Instructions

Preheat oven to 375 degrees F.

Brown ground beef, onion, and garlic over medium heat until no pink remains. Drain any fat.

Add taco seasoning, water, and peppers. Stir to combine and simmer for about 3 to 5 minutes until most of the water has evaporated.

Combine all remaining ingredients except cheese in a 9×13-inch pan. Cover and bake 30 to 35 minutes or until rice is tender.

Uncover, top with cheese and broil for 1 to 2 minutes or until cheese is melted. Rest for 5 minutes before serving.
