
How To Make Sloppy Joes Baked Sweet Potatoes
This healthier, gluten-free version of sloppy joes has baked sweet potatoes in place of bread. It comes with meat and veggies tossed in tomato sauce.

Ingredients
- 28ozsweet potatoes,(4 medium), washed and dried
- ½lb93% lean ground beef
- 1tspseasoned salt,such as Montreal Steak
- ⅓cupcarrot,chopped
- ⅓cuponion,chopped
- ⅓cupmushrooms,chopped
- 2tbspchopped red bell pepper,chopped
- 1clovegarlic,minced
- ½tbspred wine vinegar
- ½tbspWorcestershire sauce
- 8oztomato sauce
- 2tsptomato paste
- ⅓cupwater
- 1scallion,chopped, for garnish

Poke holes all over sweet potatoes with a fork, then cook in the microwave for 7 to 10 minutes. Or cook in a slow cooker on Low 6 to 8 hours or in the oven 425 degrees F for about 45 minutes, or until tender.

Heat a medium skillet over medium-high heat. Add the meat and steak seasoning to the pan and cook, breaking it up into small pieces.

Add the onion, garlic, carrots, mushrooms, and red peppers to the skillet.

Reduce heat to medium and add red wine vinegar and Worcestershire sauce, cook for 4 to 5 minutes. Add tomato sauce, paste, and water to the skillet, stir to combine.

Cover and reduce heat to simmer and cook for about 15 to 20 minutes until carrots are tender.

To serve, cut sweet potatoes open, sprinkle with a pinch of salt, and top each with ½ cup of meat and scallion for garnish.
