Ingredients

  • 1lbbeef,ground
  • ½cuplong grain rice,cooked
  • ¼cuponion,diced
  • ½tspgarlic powder
  • 2tbspparsley,fresh
  • 1tbspWorcestershire sauce
  • 1egg

For Tomato Sauce:

  • 10ozcondensed tomato soup,(1 can), undiluted
  • 1cupvegetable juice,such as V8
  • 1cuptomato sauce
  • ½tspgarlic powder
  • ½tspItalian seasoning
  • salt and pepper,to taste
  • parsley,chopped, for garnish

Instructions

  1. Preheat oven to 350 degrees F. 

  2. In a large bowl, mix the ground beef, rice, onion, garlic powder, parsley, Worcestershire sauce, egg, salt, and pepper until well combined.

  3. Shape the mixture into approximately 20 balls. Place in a baking dish, approximately 2 quarts.

  4. Combine all ingredients for the sauce and pour over meatballs.

  5. Bake uncovered for 1 hour. Garnish with parsley, salt, and pepper. Serve over rice or mashed potatoes.
