These Tuscan white beans are cooked in chicken broth and vinegar with spinach, shrimp, and sage. Enjoy this Mediterranean dish in 30 minutes.

Ingredients

  • 2tspextra virgin olive oil
  • 1lblarge shrimp,peeled and deveined, (weight after peeled)
  • 1medium onion,chopped
  • 4clovesgarlic,minced
  • 2tspfresh sage,chopped
  • 2tbspbalsamic vinegar
  • ½cupchicken broth,low sodium, fat-free
  • 15ozcannellini beans,(1 can) no-salt added
  • 5cupsbaby spinach
  • ozfeta cheese,crumbled reduced-fat

Instructions

  1. Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat.

  2. Cook shrimp for about 2 to 3 minutes until just opaque. Transfer to a plate.

  3. Heat remaining oil in the same skillet over medium-high heat and add onion, garlic, and sage. Cook for 4 minutes, stirring occasionally until golden.

  4. Stir in vinegar and cook for 30 seconds.

  5. Add broth, bring to a boil and cook for 2 minutes.

  6. Stir in beans and spinach and cook for about 2 to 3 minutes until the spinach wilts.

  7. Remove from heat and stir in shrimp.

  8. Top with feta cheese and divide in 4 bowls.
