How To Make Tuscan White Beans with Shrimp and Feta
These Tuscan white beans are cooked in chicken broth and vinegar with spinach, shrimp, and sage. Enjoy this Mediterranean dish in 30 minutes.

Ingredients
- 2tspextra virgin olive oil
- 1lblarge shrimp,peeled and deveined, (weight after peeled)
- 1medium onion,chopped
- 4clovesgarlic,minced
- 2tspfresh sage,chopped
- 2tbspbalsamic vinegar
- ½cupchicken broth,low sodium, fat-free
- 15ozcannellini beans,(1 can) no-salt added
- 5cupsbaby spinach
- 1½ozfeta cheese,crumbled reduced-fat
Instructions

Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat.

Cook shrimp for about 2 to 3 minutes until just opaque. Transfer to a plate.

Heat remaining oil in the same skillet over medium-high heat and add onion, garlic, and sage. Cook for 4 minutes, stirring occasionally until golden.

Stir in vinegar and cook for 30 seconds.

Add broth, bring to a boil and cook for 2 minutes.

Stir in beans and spinach and cook for about 2 to 3 minutes until the spinach wilts.

Remove from heat and stir in shrimp.

Top with feta cheese and divide in 4 bowls.
