How To Make Spanish Migas

Spanish migas is a carb-filled breakfast loaded with cubed bread, bacon, and chorizos! Whip up a filling batch in less than an hour.

  • 5 cups bread, stale, cut into cubes
  • 3 chorizos, (Spanish sausage)
  • 5 strips bacon
  • 6 cloves garlic
  • salt and black pepper, to taste
  • extra virgin olive oil


  1. Crumble the bread and sprinkle it with a little water (make it slightly damp but not completely wet). Let it sit covered overnight.
  2. Grab a pan and put enough oil to cover the bottom. Heat the oil and fry the bacon cut into strips. Cook until golden brown, then add the sliced ​​chorizo.
  3. Cook the chorizo for 7 to 10 minutes ​​until it is tender and golden. Remove the chorizo ​​and bacon from the pan and set them aside for now. Leave the cooking oil in the pan to reuse it.
  4. In the pan, add the garlic, and cook for 3 minutes until golden brown. Add the breadcrumbs and stir.
  5. Stir for 5 to 7 minutes until they are completely and evenly toasted.
  6. Once toasted, add the chorizo ​​and bacon, then heat everything together for about 3 to 5 minutes.
  7. Serve warm and enjoy!
