How To Make Skillet Roasted Potatoes

Roasted potatoes prepared and finished in a skillet is a simple dish you can’t go wrong with. Butter & olive oil provide the flavors to the potatoes.

  • 2tbspunsalted butter
  • 1tbspvegetable oil
  • lbswhite potaoes,or yellow potatoes, small, 2 inches in diameter


  1. Salt and freshly ground pepper In a large skillet, melt the butter in the oil over moderate heat until sizzling.

  2. Add the potatoes, cut side down, and cook for about 10 minutes over moderately low heat until golden brown on the bottom.

  3. Turn and cook for about 10 more minutes, until golden brown on the other side and tender.

  4. Season with salt and pepper and serve hot.
