Seasoned with Mexican spices and tossed with bell peppers, corn, and beans, this shrimp skillet is another one-pan dish that you should add to your arsenal.

  • 1tbspolive oil
  • 1red bell pepper,chopped
  • 1green bell pepper,chopped
  • 1lblarge shrimp,peeled and deveined
  • 1Taco Seasoning
  • 15ozcorn
  • 15ozblack beans
  • 1cupcherry tomatoes
  • ½cupolives,chopped
  • ¼cupcilantro,chopped

Instructions

  1. In a large skillet, add the olive oil and turn to medium high heat. Add the bell peppers and sauté until almost tender. Add in the shrimp and cook for about 3 to 4 minutes until they are opaque and cooked through.

  2. Add in the taco seasoning, corn, black beans, tomatoes, olives, and cilantro and mix until it is incorporated.
