
How To Make Lentils with Smoked Sausage and Carrots
Enjoy a rich and filling meal with a bowl of these gently cooked lentils, served with a rich and hearty smoked sausage and soft carrots!

Ingredients
- 2tbspcooking oil
- 1onion
- 3garlic cloves
- 3carrots
- 1lblentils,(about 2⅓ cups)
- 4cupswater,(1 quart)
- 1¼tspsalt
- 1bay leaf
- 1tspdried thyme
- 1lbsmoked sausage
- 3tbspfresh parsley,chopped
Instructions

In a large saucepan, heat the oil over moderately low heat. Add the onion, garlic, and carrots.

Cook, stirring occasionally, for about 5 minutes until the onion is translucent. Add the lentils, water, salt, bay leaf, and thyme.

Bring to a boil, reduce the heat, and simmer, partially covered, for about 20 minutes, until the lentils are almost tender. Discard the bay leaf.

Stir in the smoked sausage and parsley. Cook for about 10 minutes longer, until the lentils are just tender but not falling apart and the sausage is warm.

Serve warm with wine, and enjoy!
