How To Make Huevos Rancheros

A meatless meal ready in under 30 minutes, this huevos rancheros recipe makes use of a crispy tortilla base filled with lettuce, tomato, cheese, and eggs.

  • ½tspoil
  • ½onion,minced
  • 1medium tomato,minced
  • 2tbspgreen chiles,chopped
  • oil spray
  • salt and pepper
  • pinch cumin,optional
  • 2large eggs
  • ¼cuplettuce,shredded
  • 1ozcheese,shredded
  • 2tspcilantro,chopped
  • olive oil spray
  • 2corn tortillas


  1. Heat oil in a small pan. Add onions and cook for about 1 minute.

  2. Add tomatoes, chilies, cumin, salt, and pepper then cook for a few minutes. Set aside and keep warm.

  3. In another medium non-stick pan, lightly spray the tortillas with oil on each side and heat a few minutes on both sides until tortillas gets crispy and pockets or air bubbles start to form inside. Set aside.

  4. In the same pan, lightly spray more oil and add eggs, salt, and pepper. Cover and cook until sunny-side up.

  5. To serve, place a tortilla on each plate, top with egg, tomatoes, lettuce, cheese, and cilantro.
