This hamburger and rice recipe is a sort of hybrid taco salad. The rice takes up much of the room that would otherwise be occupied by tortilla chips so the end result should be healthful.

Ingredients
- 1 lb ground round
- 1 onion, chopped
- 10 oz tomatoes, diced
- 1 cup rice
- 1 cup water
- 1 oz taco seasoning, (1 pkg)
- 1 ½ cup lettuce, chopped
- 1 tomato, chopped
- 1 cup black olives, sliced
- 1 avocado, diced
- 2 cups Monterey Jack cheese, shredded
- 1 cup sour cream
- tortilla chips
Instructions
- Cook hamburger and onion together in a skillet until meat is well done.
- Drain off fat.
- Add canned tomatoes, water, rice and taco seasoning.
- Cook over medium heat until rice absorbs the water.
- Remove from heat and add lettuce, tomato, black olives, avocado, cheese and sour cream to the top of the hamburger and rice.
- Serve with tortilla chips.
